White Chicken Chilli in the Crock Pot






Ingredients
  • 1½ lbs boneless skinless chicken I use the Bare Chicken Brand from Target
  • 1 45 oz jar of great northern beans 
  • Saute 1 cup of onions and 1/2 cup of garlic together
  • 1 Tbsp Chili Powder
  • 1 Tsp Cumin
  • 1 Tbsp Cilantro
  • 1 can chopped green chilies
  • 4 cups of chicken broth (one box)
  • 1 Bag of Mixed veggies with red and green peppers
  • 2 Stalks Diced Celery - if you want
  • ½ cups of plain yogurt - left this as an option for people to add later
  • Topping that we like….
  • Cheese, Chopped Onion, Cilantro, Avocado, Limes, Fresh Cilantro
Instructions
  1. Cut chicken into large chunks and place in your slow cooker.
  2. Top with one can of beans,veggies, sautéed onions, garlic and celery.
  3. Pour the remaining can of beans in a bowl and smash with the back of a spoon. Stir them around until they are like a paste. Place this bean paste into the crockpot. This will make your chili creamy, without adding cream!
  4. In a medium bowl, combine chili powder, cumin, cilantro, chilies, and chicken broth.
  5. Pour over top of ingredients in the crock pot.
  6. Cover and cook on low for 8 to 10 hours.
  7. Before serving, stir gently and then stir in the yogurt or leave till later
