Quinoa Fiesta


This recipe was revamped from one I saw online
there were ingredients in it that I feel are just fillers
and unnecessary foods so they were deleted
and replaced with nutritional ones -
I try to get right to the  point in my recipes as 
NO ONE has time to scroll thru a bunch of ads
and nonsense on how to actually cook  - 
USE YOUR IMAGINATION & 
MAKE COOKING FUN


In a crock pot and cooked on low till tender and steamy
1 pkg of cooked ground turkey 
1 can of organic black beans
1 can of organic chili bean mix
1 can of organic cannellini beans
1 can of green chili tomato mix
2-3 cups of organic veggie broth
either fresh cilantro or dried
2-3 cups of cooked quinoa
to taste minced garlic
1 package of broccoli slaw
this was a wonderful treat on a cold day 
here in Northeast Georgia Mountains
I sprinkled a bit of Cabot Sharp Cheddar Cheese on top.
Serve this with a small salad of your choice -

Protein Abundant Salad


A long time ago a lady told us about putting egg whites
in a salad - I tried it then and we loved it!
Today I needed some extra protein so I made this 
salad again - 
1 whole egg and 1 egg white - 
pan sauteed in a bit of olive oil with your choice of seasoning ~
once cooked
I put them over mixed greens
the olive oil seasoning mix made the dressing
I then added a touch of our favorite cheese - 
ENJOY - 
Delightfully delicious and nutritious!
