Morning GOODNESS

Another wintery day here in the North...
There are those mornings when you wake up 
and your body says
"BLUEBERRIES"
your mind says 
"MUFFINS"
So up I jump to make muffins to go with the batch 
of FARM FRESH Scrambled eggs hubby is whipping up
BUT
First I must find the perfect recipe to revamp!!
Here it is...
the response to these was 
OH MY!!
So here you have it my


"OH MY" Blueberry Muffins
Makes about 6 large muffins
heat oven to 400 degs.

1 1/2 cup of unbleached flour
3/8 cup of sugar in the raw
3/4 cup of real Maple Syrup
1 tsp of pumpkin pie spice
1/2 teaspoon of sea salt
2 teaspoons of baking powder
1/3 cup of olive oil (or veggie)
1 farm fresh egg
1/3 cup of coconut milk (or reg. whole milk)
1 cup or more of frozen or fresh blueberries - 
Combine all ingredients 
put in greased muffin tin 
you can use liners if you want 
I prefer not too!
Bake for 20-25 mins 
or until toothpick comes out clean - 

when they were done I covered them 
with a mixture of 
sugar in the raw, butter and conf. sugar - 

These were delish and if you can stop at just ONE they are good for you ;-)
